we’re going to make some roasted red pepper hummus and you know it weren’t that long ago that I would tell you that I don’t even like hummus i don’t even really care that much for chickpea but my youngest daughter Goldie now she likes hummus matter of fact she loves it so I was buying it but you know good stuff can be kind of expensive so I wasn’t buying it as much as she has liked and because I really didn’t like it I wasn’t making it either but one day my mama dropped off five cans of chickpeas and I was like well hummus it is so I had all those cans to play around with and that I did and you know what i found out that I actually like hummus i just don’t like it thick i like it on the sloppy wet side it’s amazing what a little bit of old will do it made that hummus go from hard to swallow to slip right down last night now whenever Goldie asks for hummus I gladly make her a batch

    Ingredients:
    🫒1/3 cup extra virgin olive oil, plus more for drizzling
    🛢️1 can chickpeas (15 oz), drained and rinsed
    💧 4 tablespoons reserved chickpea liquid
    🥥2 tablespoons tahini
    🧄1 head of garlic
    🍋 Juice of 1 whole lemon (about 2 tablespoons)
    🧂Salt, to taste
    🌿1 teaspoon ground cumin
    🫑1 teaspoon smoked paprika (or regular paprika, depending on your preference)
    🌶️2 roasted red peppers (jarred or homemade)
    🌿🌶️Garnish: extra olive oil, paprika, red chili flakes, and freshly chopped parsley
    Instructions:
    🌶️Prepare Your Ingredients:
    🌶️Preheat your oven to 375°F (190°C).
    🌶️Cut the red peppers in half, remove the seeds, and place them cut side down on a greased baking sheet.
    🌶️Take the head of garlic and slice off the top to expose the cloves. Drizzle it lightly with olive oil and sprinkle with a pinch of salt.
    🌶️Wrap the garlic head in aluminum foil, creating a sealed pouch to trap the steam, and place it on the baking sheet alongside the peppers.
    🌶️Roast in the preheated oven for about 30 minutes, or until the peppers are soft and charred, and the garlic is tender.
    🌶️Once roasted, allow the garlic to cool slightly before squeezing the softened cloves into a food processor.
    🌶️Add the drained chickpeas, reserved chickpea liquid, tahini, lemon juice, salt, cumin, paprika, and the roasted red peppers.
    🌶️ Blend until smooth. If you prefer a creamier or more runny consistency, feel free to add more lemon juice or olive oil gradually until you reach your desired texture.
    🌶️Taste and Adjust:
    🌶️Taste your hummus and adjust the seasonings, adding more salt, lemon juice, or spices to suit your preferences.
    🌶️Transfer the hummus to a serving bowl and drizzle with extra olive oil. Sprinkle with paprika, chili flakes, and freshly chopped parsley for a bright and flavorful garnish.
