Question for OP or anyone else: as a recent convert to the kettle life, I have yet to try ribs. Seems like part of one of them is going to be closer to the heat than the other, basically in its entirety. Do you rotate? Or just yolo it? I have learned that there is a LOT less needed for good bbq than I initially thought, but I am still learning where extra effort is needed.

You’re doing the charcoal snake wrong. I always go counter-clockwise. /s
You can fit 3 slabs if you use a charcoal ring and heat diffuser.
