Last time I did this kind of « what I eat in a dayΒ Β» on this subreddit, the comments were not very kind (basically Iβm gonna die from this diet π).
But never mind, I had the most delicious day so I thought I wanted to share the recipes π₯°
for breakfast: a chickpea omelette
I whisk about 2/3 cup of chickpea flour with water, salt, pepper, spinach. Then cook it in a pan with a little bit of oil, and add vegan feta in the middle.for lunch: I made the most delicious Mediterranean bowl π₯Ή with a base of hummus, a Greek salad, tempeh and quinoa.
