Something I’ve been happy to learn throughout this process is that I don’t have to eat “diet food.” The thought of subsisting on fruit, salads, veggies for snacks, brown rice and chicken breast alone makes me recoil.
I love to cook and try new recipes and flavors, so exploring low calorie meals that fit well within my calorie budget but don’t taste like I’m holding back are the holy grails of my meal planning.
Tonight’s dinner fell into that category so I wanted to share. It’s chock full of veggies, lean meat, and filling udon. Here’s the gift recipe for anyone interested. You could definitely go half the soy sauce recommended and it still be delicious.

Can’t edit post: apparently I can’t read numbers 🙄 it’s 427 instead of 412. Sorry!
