Tonight, I took one of my absolute favorite “traditional” recipes (from my sweet MIL) and converted it to fully plant based.

I took her recipe for carne guisada and recreated it with portobello, tempeh, jalapeño, bell pepper, onion, garlic, broth, and seasonings. It’s still comfort food!

    That said, I convert a lot of traditional Chinese recipes to vegetarian using substitutions like Vegeta for chicken powder, crisco for lard, and any number of fake meats.

    I don’t have a picture on hand; but I make a vegan version of traditional Chinese scrambled eggs and tomatoes using tofu. I actually learned how to do that one from a Chinese friend years before I heard of the egg version. I had no idea. But it’s one of my favorites.
