Creamy Pasta and Peas
Ingredients for 4 people:
11.28 oz (320 g) “Fusilli” pasta
10.58 oz (300 g) Fresh or frozen peas
2.82 oz (80 g) soft cheese such as “Stracchino”
1.76 oz (50 g) Grana Padano cheese
1 Fresh Spring Onion

Brown the onion in a pan with 2-3 tablespoons of olive oil. Today we prepare two vegetarian pasta recipes. You will be amazed at how delicious they are but at the same time easy to prepare! Add 1 tablespoon of tomato paste. It is a versatile ingredient that can be used in different recipes to enhance the flavor of dishes. Mix and brown everything together for a few minutes. The tomato and onion will take on a more delicate flavor. 2-3 medium-sized peppers. Peppers are low in calories and therefore suitable for low-calorie diets. Remove the white parts and seeds. Peppers are a vegetable rich in vitamins and minerals, such as vitamin C, vitamin A and potassium. Cut into more or less large pieces. Peppers can be eaten raw, cooked, grilled, stuffed or used in many recipes. Transfer the peppers to the pan. Stir. Add hot pepper if you like. My husband and son like it very much)) Peel a medium-sized potato. Potatoes are rich in carbohydrates (mainly starch), vitamins (C, B6, B1), minerals (potassium, phosphorus), and fiber. Cut the potato into more or less large pieces. Did you know that they are also a good source of energy? Transfer them to the pan. Add salt. Also pour 2-3 ladles of hot water that you put in a pot to cook the pasta later. Lower the heat under the pan, close with the lid. Cook for 30 min. Then check if the vegetables are soft. Then remove them from the heat. Transfer the cooked vegetables to a blender glass. Blend the vegetables and get a very tasty pasta sauce. Thanks to the blended consistency the sauce will be very creamy. This creaminess is also given by the potato present in the sauce. Blend for a few minutes. You should obtain a similar consistency. Pour the dressing into the same pan. Look at the color and the silky and creamy consistency! Add the fresh basil. A few leaves. I break it with my hands. Its aroma and flavor are more intense when used fresh. Cooking can alter its flavor and aroma. In fact the pan is off the heat! We need to cook the pasta. Add salt to the boiling water. Cook the pasta you like. Respect the cooking time indicated on the package. “Al dente” in cooking, especially for pasta, indicates a state of cooking in which the pasta is slightly resistant to biting, but not raw. Drain the cooked pasta directly into the pan with the pepper and potato sauce. Pasta is a versatile food, which can be consumed in different ways and with various condiments, and an important pillar of the Mediterranean diet. Pasta is mainly made of durum wheat semolina, water and salt. Pasta is rich in carbohydrates, but also proteins, fibers and vitamins. Gently mix the sauce and the cooked pasta. Pasta has ancient roots, with the first forms of pasta dating back to ancient civilizations such as the Greeks and Etruscans. Because now I’m going to show you another delicious vegetarian recipe. Boil the water to cook the pasta. Salt the water. Clean a fresh spring onion. Chop it. The spring onion is an onion bulb harvested before it is fully ripe. Especially appreciated in spring and summer, with a more delicate flavor and a softer texture than the mature onion. Heat 3-4 tablespoons of oil in a pan. Add the spring onion and brown it gently. Also add 10.58 oz (300 gr) of fresh peas. In summer it is better to use them fresh and not frozen. They are an excellent source of energy, contain little fat and are gluten-free. They are particularly rich in vitamin C, folic acid and vitamin K. Pour a little water that you have prepared for cooking pasta. Let it cook for 10 min. Cook the pasta. I chose “fusilli” pasta, its cooking time – about 11 min. Their helix shape makes them ideal for retaining the sauce. At the end of cooking the peas taste them and salt if necessary. Keep aside a little cooked peas for decoration. Transfer the rest to a blender glass together with their cooking liquid. I also added a little pasta cooking water to get the soft and creamy consistency of the pea sauce. Blend well. Drain the pasta in the same pan where you cooked the peas. Pour the pea sauce. You can turn the heat on not too high and mix the pasta with the sauce. If you see that the pasta is dry, it is not creamy enough then add a little hot pasta cooking water. Turn off the heat. Grate on top 1.76 oz (about 50 gr) of Grana Padano type cheese. Mix to combine everything. Take 2.82 oz (80 gr) of soft cheese such as stracchino or other similar. Add the cheese in tufts to the pasta. Mix. Decorate the pasta with a few tufts of cheese and the peas kept aside. Do you know stracchino? Stracchino is a fresh, creamy and easily spreadable cheese, pearly white in color.
