I bought this earlier on a whim while with my two toddlers so I didn't have much time to continue looking/ comparing… is the label incorrect? Trying to plan out the best way to cook but now I'm thinking it's not actually boneless chuck short ribs. it looks similar to skirt steak to me? Thought it looked good for $9.99/lb 😂

    It could be skirt steak or flap meat. But if it’s labeled correctly then it’s probably just pieces they cut off the chuck roast to make boneless short rib. Which would make great stew or a crock pot dish.

    That looks like the Denver portion of a stupid lean chuck roll. There’s a pretty identifiable Denver in there, and the rest of it looks like the leaner part that you would never see cut into steaks. I’d just braise them because even if it’s a Denver, they look just awful and cut the wrong way. Treat it like a short rib and it’ll be great.

    This looks exactly like labeled, chuck short ribs. In the shoulder, there is a muscle that sits somewhere between the chuck eye and the top blade and the surrounding shoulder blade bone. It’s tough. Because you cook it like a short rib, they call it chuck short ribs. If you have access to a 7-bone steak, which is a cross section of the shoulder, you these cuts in relation to each other.

    This is not the flap, which has a looser grain and more intramuscular fat.

    These will make perfect steak tacos! Seer the heck out of each side and make some pico de gallo throw on fresh tortillas with a side of chips and guacamole and you’re set for Mexican night!
