Ingredients (makes about 1/3 cup):

2 tablespoons olive oil
1 tablespoon fresh lime juice
1 teaspoon honey
1/2 teaspoon Dijon mustard
Pinch of salt
Pinch of black pepper

Instructions:

1. Mix it up:

In a small bowl or jar, whisk or shake together all ingredients until well combined and slightly thickened.

2. Taste and adjust:

Add more honey for sweetness, more lime juice for tang, or a bit more oil to mellow it out.

3. Use or store:

Use immediately or refrigerate in a sealed jar for up to 5 days. Shake well before each use.
