Perfect for cooler nights or feeding a crowd, this comforting classic gets a little extra love with homemade chicken stock, smoky bacon, a parmesan rind (trust us, don’t skip it), and a handful of pasta stirred in at the end.

Ingredients:
– Olive oil, smoky bacon (Kaiserfleisch), onion, carrot, celery
– Garlic, ripe tomatoes, broccoli, zucchini, flat beans
– Fresh Italian sausages (rolled into meatballs)
– Chicken stock, fresh borlotti beans, ditali pasta
– Parmesan rind, parsley stalks, salt & pepper
To serve:
– Grated parmesan, basil & parsley leaves, crusty bread
Steps:
Brown sausage meatballs in olive oil, set aside.
Sauté bacon, then add diced veg and soften gently.
Stir in borlotti beans, garlic, and herbs.
Add tomatoes, parmesan rind, and stock. Simmer.
Add greens and cook until beans are tender (about 70 mins).
Stir in pasta and return meatballs to heat through.
Serve hot with fresh herbs, parmesan, and bread for dunking.
