Dressing (not pictured) is ginger, garlic, tamari, lime juice, sesame oil, and peanut butter.
Tagged "close enough" for the couple of store bought components, but I feel great about this meal!

I love soba noodles! They work so great for lunch prep too. I make a similar dressing too. I often have yuzu juice in the fridge as well.
