Buckwheat soba noodles (on the bottom), carrots, edamame, red cabbage, cucumber, bell pepper, kimchi, roasted salmon, cilantro, sesame seeds, and crumbled seaweed.

Dressing (not pictured) is ginger, garlic, tamari, lime juice, sesame oil, and peanut butter.

Tagged "close enough" for the couple of store bought components, but I feel great about this meal!

    I love soba noodles! They work so great for lunch prep too. I make a similar dressing too. I often have yuzu juice in the fridge as well.
