i’m Joanne That’s Adam behind the camera And we’re the couple behind inspiredtaste.net I am going to show you how to make the zucchini recipe I cannot stop eating We roast zucchini with some garlic in a hot oven until it’s golden brown And then we toss in some crumbled feta cheese and fresh dill It’s like my favorite herb I love it and I think you will too Let’s go make it Let’s start by chopping our zucchini We’ve got one and a quarter pounds and like to cut them into bite-sized pieces We also need some garlic so mince one or two cloves Toss the zucchini onto a baking sheet and then top with the garlic 1/4 teaspoon of salt and a generous amount of pepper Drizzle over a couple tablesp of olive oil Toss everything well and then spread it into one layer One layer is important because it helps the underside of the zucchini to brown Exactly Now roast the zucchini in a 425° F oven for about 20 minutes While it roasts chop a handful of fresh dill Now here’s my favorite part After 20 minutes of being in the oven crumble an ounce or so of feta cheese over the zucchini Then slide the baking sheet back into the oven and roast for another 5 minutes I love how the cheese warms in the oven Okay last step Sprinkle over that dill from earlier and enjoy We both love this easy recipe It’s quick simple and delicious
