This amazing Italian wedding soup is a combination of homemade meatballs with spinach, carrots, celery, onion, garlic, and pasta (I use couscous but you can use orzo too). Sometimes I use millets instead of the couscous to make it even more healthy. Rolling the mini meatballs is the most time-consuming part, but I usually have plenty of volunteers to help me with it. It is worth every minute of work, since this nutritious Italian soup is truly a perfect bowl of comfort. Ingredients:

meatballs:
1 lb of ground beef
1/2 bunch of parsley
1 egg
1/2 cup of shredded parmesan cheese
1/2 cup of bread crumbs
1 1/2 tsp of dried oregano
1 tsp of salt
1/4 tsp of ground black pepper
1 garlic clove
3 tbsp of milk
+ 1 tbsp of olive oil to sear them

soup:
1 1/2 cup of chopped carrots (about 3 carrots)
1 1/2 cup of chopped onion (about a half onion)
3/4 cup of chopped celery (about 2 sticks)
1 tbsp of butter
4 garlic cloves
1 tbsp of all seasoning spice (vegeta)
1 tbsp of salt
1/4 tsp pf ground black pepper
1/2 cup of couscous (Acini Di Pepe)
6 oz of spinach
