Ingredients:
* 1 cup dry chickpeas (soaked overnight)
* 1 small onion
* 3-4 garlic cloves
* A handful each of coriander & parsley
* 1 tsp baking powder
* 1 tsp cumin powder
* 1/2 tsp black pepper
* Salt to taste
* 2-3 tbsp besan (gram flour)
* Oil for frying
Method:
1. Soak chickpeas overnight in water.
2. Drain and blend coriander, parsley, onion, and garlic until coarse.
3. Add chickpeas, baking powder, cumin, black pepper, and salt. Blend again until combined but not paste.
4. Transfer to a bowl, add besan, and mix well.
5. Chill the mixture for 30 minutes.
6. Shape into small balls or patties.
7. Heat oil and fry falafel until golden brown. Drain on paper towels.
8. Serve hot.
Hummus Recipe
Ingredients:
* 1 cup boiled chickpeas
* 2-3 tbsp tahini (see method below)
* 2-3 tbsp lemon juice
* 2 garlic cloves
* 2 tbsp olive oil (+ extra for drizzle)
* Salt to taste
* Ice cubes (optional)
* 1/2 tsp cumin powder
Tahini (Sesame Paste) Method:
1. Lightly toast 1/2 cup sesame seeds.
2. Let cool, then blend with 2-3 tbsp oil until smooth.
Method:
1. Add boiled chickpeas, tahini, lemon juice, garlic, olive oil, salt to blender.
2. Blend until smooth and creamy.
3. Add ice cubes and cumin powder; blend again.
4. Adjust salt and lemon juice to taste.
5. Spread on a tray, drizzle olive oil on top.
6. Add falafel on hummus and serve.
