Sometimes you just need to clean out the fridge for dinner. Had 8 oz. of broccolini and a sweet potato. Dressed both in EVOO, salt, pepper. Roasted the potatoes at 425 for 30 minutes covered (starting them as the oven preheated). Uncovered for 15. And then flipped and continued for 10 minutes, and at that point adding the dressed broccolini to the sheet. Easy dinner. Plus I fried two of my four-egg-a-week max (I’ve been doing this for about five weeks and have only had four egg yolks so far).
