  4. The people calling this pulled pork are kind of sacks of shit. This kind of rib cook is amazing for a few things:

    1. People who like and expect fall of the bone ribs, aka people who havn’t been smoking ribs for 20 years like we have

    2. People who like to make boneless sandwiches

    3. People who will chop this up and put it in tacos, mac and cheese, or other dishes

    Calling it “pulled pork” is disingenuous and shitty behavior. OP does not seem to be entering these into a competition. I have been smoking BBQ for over 25 years and sometimes I do my ribs fall off the bone for all the reasons listed above.

    In short, go fuck yourselves, BBQ is for everyone (except assholes).

    I thought this was the only way to do it. Any time I’ve had ribs that weren’t fall off the bone they just feel rubbery.

    I like fall off the bone ribs like yours, they get nice and buttery. Theyre way diff from a pulled pork flavor and texture for sure.

    I also like dry rub no wrap ribs too sometimes. It’s nice to have both.

    In competitions fall off is considered “overcooked” that being said, I’d lose every competition because I love it barely hanging on! Awesome job on the ribs! Looks great

    I like doing this with a shittake and Guinness little stock bath. Roast garlic mash potatoes and some broccoli stems + gravy from the stock, and I’m an absolute hounddog on it

    I’ve had some fall of the bone that are like porridge, and others that are just past Al-dente. I’ve had some that I thought were right with “just a little” bite, but I preferred them reheated the next day. I’m not going to win any rib competitions.

    Also, from what I’ve read from people who compete, they would not serve those intense flavor combinations because of “palate exhaustion”. Those ribs you made look delicious, and I would totally McRib them.

    I strongly prefer fall off the bone,l and slightly overcooked. I know that’s not the “perfect” method of cooking them but I don’t give a shit, it’s how I like it. I find ribs to be way too greasy otherwise. For the record, ribs are the only thing I prefer this way.

  17. To each their own! Do what you like to do. I used to cook mine like this unintentionally and they still tasted amazing. If you aren’t doing competition bbq who cares?

    I’m with you. I enjoy some toothsome ribs too but if I had to pick I’ll choose falling off the bone every time.

    I tried doing the influencer bite through, naked, simple seasoning ribs and kept being disappointed. Tried a wrap, went for sticky sweet fall of the bone and instantly amazing, whole family loved got cries of best ribs ever Dad. Your ribs look great, enjoy!

    Ribs being over doesn’t mean they will taste horrible. They’re just more like pulled pork. Would probably be great in a sandwich.

    I do 2 then 1 wrapped then 15 mins to caramelize the sauce at 275. Perfect.

    I like mine not quite fall off the bone. The 3-2-1 method at 230°F is a little beyond what I like.

    I still play around with time, last time I did a 2-2-1 and it was pretty good. But I’m not dialed it yet like I like, still more experimenting to go

Pork ribs are maybe my least favorite bbqed meat and fall off the bone isn’t my thing in particular, BUT my wife and kids love them this way so I wind up making them every month or so and meanwhile I smoke up a bunch of chicken wings for myself. Good on you for making what you like how you like it.
