I didn’t grow up eating this, but kotosoupa avgolemono is a classic Greek soup with chicken, egg, and lemon — no cream. I swapped in purple, red, and brown rice instead of white for more fiber and flavor. It’s such a good mix of a comfort soup that mixes tradition.

i actually didn’t grow up eating this delicious soup but so many of us use food as a way to connect back to our cultures this soup is heart healthy and such a good way to start or end off your day instead of a classic white rice I use multicolor rice to boost the nutrition i love how filling this soup is and how I get a little taste of grease every time I make it

    This is the recipe I roughly followed for this.

    For broth i used a mix of Kettle and Fire chicken broth + bone broth

    I added wild rice (purple, red, and brown), i also make sure to use red onion, and i include some parsley when cooking, not just as a topper.

    I cooked chicken separately and seasoned with same seasoning that go in the soup, salt, pepper,
    dried italian seasoning and adobo😈

    For the Emulsion, i kept the whites because why not and it turned out great! Enjoy and comment what recipes from your culture are a staple that i must try next.
