This is my favorite comfort meal as of late! I’m vegan and gluten free.

I basically make French onion soup
Carmelized onion, garlic, veggie broth, vegan Worcestershire, tamari, thyme and bay leaves.

Then add butter beans and boil it all together for 20ish minutes. Topped with garlic & parm croutons made from a baguette. Vegan feta & parm, basil and parsley.

  1. – 2 large brown onions, carmelized for almost 90 minutes, added salt to draw out moisture

    – added 5 cloves of garlic, bay leaf, and thyme, salt & pepper

    – after garlic was golden, you can deglaze the pot with red wine, brandy or stock! Then added 4 cups of stock, 2tbsp tamari (or soy sauce), and the same amount of Worcestershire.

    – tasted for seasoning and simmered for about 10 minutes

    – added 3 cans of butter beans (no liquid), some chopped parsley and cooked for another 10-15

    For the croutons, I cut up a baguette and pan fried in olive oil with salt, pepper, and garlic. Added parsley once croutons were golden.
