hi everyone Welcome back to a little bit of love Today we are making something that I always crave when that golden evening light starts pouring in Here’s what you’ll need Spinach onion garlic feta cheese and of course a couple of eggs Let’s start by chopping the garlic into small pieces If you’re doing this in the evening I swear there’s something extra comforting about the smell of garlic sizzling in butter You’ll know what I mean in a minute Now finally chop half onion No shortcuts here A fine chop means it blends right in No big onion chunks stealing the show Then comes the spinach And here’s a tiny tip Always chop more than you think you need Trust me spinach has a disappearing act once it hits the heat Every time I think I’ve added enough it cooks down to a spoonful Let’s heat up a pan and melt a little butter In goes the garlic and onion Listen to that sizzle and give it a good saute until the onion turns golden and soft Now toss in your chopped spinach Stir it gently and let it wilt down And did you know what we are making here is inspired by the famous dish sparakida a traditional Greek dish and is a favorite appetizer meal and snack not only in Greece but around the globe Just spreading some light Now is the time to add chili flakes if you like a bit of heat Oregano for that herby touch and some black pepper and salt At this stage it’s starting to smell so good You’ll be tempted to stop right there but hold on Close with a lid and let the flavors melt together Once it’s nicely sauteed transfer the mixture to a bowl and let it cool for a moment Then add an egg And full disclosure I forgot to film that part So just imagine a graceful egg crack here And crumble in your feta cheese Mix it all up Before we move on here’s a super important step Strain out the excess liquid Spinach holds on to water and that can make your pastry soggy We are aiming for crispy not sad and soggy Now line your baking tray with parchment paper I like to crumple the paper first Try it It fits into the tray way better and doesn’t curl up at the corners Next take your pastry sheets dip your fingers in a bit of oil and gently stretch or flatten the sheet This gives it more elasticity and makes it easier to fold Plus it turns out so beautifully flaky when it bakes Spoon in your spinach feta filling and fold the pastry however you like Triangle rolls or even little pockets There’s no rule here Just make sure they’re sealed [Music] Repeat this step and lay them on the tray Give them a good egg wash on top for that golden finish And try not to skip this part Sprinkle some white sesame seeds They’re not just for looks Once baked they add this little toasty crunch that makes the pastry Pop these into a preheated oven 350° Fahrenheit and bake for about 30 minutes or until they are golden and puffed up like little clouds Look at that So flaky so golden and that spinach feta filling just melts in your mouth If you like this don’t forget to give it a thumbs up and leave me a comment if you try it I’d love to know how you shaped yours Till then spread a little bit of love and see you in the next one
