Made Some Crispy Skin Ocean Trout. Did I Go Too Crispy?

    I’m not a huge fan of pink fish (trout/salmon) but my gf would 🌊 for that skin.

    A bit burnt but I’d still eat. Try cooking the skin with a bit of oil on low-medium heat and do not use olive oil to fry it.

    It’s a little over but I would be happy eating it. I’ve used Kenji Lopez’s method for pan frying salmon/ocean trout/arctic char and it works really well. Heat to medium/med high the put wax paper on the pan oil on the paper, fish (dried well and non skin side seasoned with spice rub) fish goes in skin side down and immediately turn heat down to med low, temporarily take off heat if it seems too high. Cooks like that for about 6 minutes, check the skin using a fish spatula to lift and peak. Then when it’s crispy golden brown, flip to the other side for only about 1 min to finish cooking. Then you can get crispy skin but a flaky mid rare fish

    Not too crispy, but too burned. If you do it right it can be a nice golden brown

    If the meat wasn’t overcooked and the skin didn’t taste burnt, then it’s perfect.

    I mean, I’d still eat it but it does look a little like your Skillet or whatever was just too hot. Take the temperature down a little bit next time and you’ll get a more appealing sear / crisp.

    That looks fantastic. The only too crispy is burnt and that’s not it.

    So to give advice on crispy skin I like to with a very sharp knife slice the skin long ways about 3/8” to half “ apart through the skin but not all the way to the meat. I find the oils in the skin are the perfect oils to crisp the skin.

    I’m thinking not to crispy, that’s not a thing. Its to hot or to long or some combination.
