if there’s one thing we all need it’s a way to get dinner on the table faster this 30 minute marami chickpeas is a spin on Tuscan chickpeas that is creamy delicious loaded with flavors from sunri Tomatoes fresh basil creamy coconut milk that you don’t even taste it just gives you that creamy element and of course some delicious cheese to round it all out this has been a highly requested YouTube video so I am very excited to share it with you and to eat some more for myself okay let’s get started okay so first we’re going to start with our ingredients and you’re going to need 10 raw cashews if that sounds like a very specific number it is and you’re just going to soak that in some hot water for about 15 minutes while you prep the rest of your veggies so that it’s finished by the time you need it and you can definitely use sunflower seeds here instead if you have a nut allergy you’re also going to need half a cup of Veggie broth and I love using this better than buan base it’s so good you’re also going to need half a cup of sundried tomatoes Plus two whole tomatoes from that can you’re going to need 1 tbsp of nutritional yeast 1 tbsp of olive oil or vegan butter for more flavor it’s up to you whichever one you want to use one small onion fin a ice and this was like a medium onion so I just cut in half three cloves of garlic 1 teaspoon of dried Italian herbs 1 teaspoon of garlic powder 1 teaspoon of onion powder you also going to need two cans of chickpeas one can of coconut cream or full fat coconut milk and about a thir a cup of shredded vegan parmesan cheese that you can use homemade or you can use store bought plus a/4 cup of fresh basil so first we’re just going to prep all our veggies and I just love doing all of this first it just makes the cooking process go by so much easier that way you’re not rushing you’re not like oh my gosh I forgot to prep this or anything like that it just makes everything go so much smoother and it really allows you to immerse into the process of cooking so much more so your cashew should be finished and they’re actually going to be slightly swollen you can also um do this overnight if you want but this is just a nice Quick Step now you’re going to add in your soap cashews along with your veggie broth your two whole sun dried tomatoes your nutritional yeast and you’re going to blend that all up this is just going to be a really just nice flavor packed sauce that’s going to just add some more Umami into that marami Chi piece and along with puring the rest of your veggies you just want to prep your chopped sundried tomatoes as well and I had someone ask me this in the blog post if you can’t find holes on dried tomatoes what to do you can just use two halves honestly it’s just really an amount that you want to make sure it’s in the sauce so you’re just getting all of that nice Umami and flavor and I always have some leftover oil from this so I just normally if I’m using like vegon bottle I’ll use like half of the sundri tomato oil in here as well so you’re just going to heat up your oil and then you are going to saut your onions for about 3 to 4 minutes until soft and translucent that’s just going to bring in so so much flavor from cooking those by themselves you’re going to add in your minced garlic your remaining chopped on dried tomatoes and then to that you’re going to add all of your seasonings your Italian herbs your garlic powder your onion powder and some salt and pepper of course as well and you just kind of want to season this to taste with the salt and pepper it’s going to depend on how salty your veggie broth is are you somebody that wants a lot of pepper basically so you just want to do this to your taste add a little bit hair add a little bit you know while it’s simmering taste again near the end and add a bit more there as well then you’re going to add in your drained chickpeas stir all of that together add back in your creamy cashew sauce and then you’re going to also add to this your coconut milk or your coconut cream and I do just want to say that this doesn’t taste like coconut milk I’ve had a lot of readers say it doesn’t taste like coconut milk at all just maybe like a tiny hint of flavor but if you’re somebody who’s like I don’t want a coconut flavored dish that’s fine it’s not going to taste like it it’s just going to give you that rich creaminess that you need in a dairyfree version basically so now you’re just going to bring this to a simmer reduce the heat to low and then you’re just going to let it cook for about 10 minutes until the sauce thickens the flavors really melt together and you’re just going to go in every now and then and just stir it you’re going to add in your vegan parm which again it’s optional but I think this like takes it over the top flavor-wise even if you’re making like the homemade version that doesn’t shred like this it still tastes amazing I like to top mine with some red pepper flakes some more CH and some fresh basil I would just like say my basil is thriving right now so I’m very happy for that this is it the dish is so easy to make it is absolutely delicious you can serve it with some delicious toasted bread you can serve it rice but yeah long story short you’re going to want to marry yourself after you take a bite of this okay we’re both to do our taste test and I just wanted to add that even though I showed it in the video with that beautiful bread dip more realistic way of serving it as dinner is definitely with rice actually my daughter loves to have this we kind of look like mashed chickpeas mix it in with some rice and it’s actually want of her go-to din [Music] now like I said in my short version of this video if I wasn’t already married I would marry myself after making this because this is so delicious this is honestly one of those meals that I feel like you could have over and over and not get tired of it because of how Nuance the flavors are and because of all the different ways that you can serve it even though I’m having it like this this could even be potentially cold in a sandwich or again you could have it with some bread hot it’s there’s so many different ways to enjoy this and it’s a complete meal I love that I love how much protein is in there fiber you’re getting so much that you actually need and most importantly it is feeling and quick and easy there are so many different variations to this as well you could do white beans you could try all sorts of different beans in here I’m stting to do like a Leno version of this the sauce and the base is just like really good that it kind of just matches with any kind of protein source so yeah definitely try a couple different r toates as well I hope that you enjoy this video so much if
