Gigantic beans, literally translated, gigantes plank is a simple and satisfying meal that fits perfectly into the Mediterranean Diet. Beans are soaked over night, and cooked in water, pepper flakes, and bay in a low oven. Grated onion, celery, carrot, and zucchini are sautéed before crushed garlic and tomato paste is sautéed into them, and finally grated tomatoes. The beans, their cooking liquid, and the tomato stew go into a casserole for a final trip into the oven.
