

Recipe:
6 cups Rice Krispies, to be toasted
1/2 cup butter, to be browned
10 oz marshmallows
1 Tbsp vanilla
1 big pinch kosher salt
1 cup additional mini marshmallows (optional)
Directions:
1. Prepare an 8×8” or 9×9” pan with either cooking spray or parchment paper overhangs.
2. Preheat oven to 400°. Put cereal on a sheet pan in an even layer and toast for 8-10 min until deeper gold in color.
3. Meanwhile, make brown butter in a saucepan.
4. Add the 10 oz marshmallows to the brown butter and stir on LOW heat until marshmallows are mostly melted. Turn off heat and keep stirring until fully melted. Stir in vanilla and salt.
5. Stir in toasted cereal. Finally, stir in additional mini marshmallows.
6. GENTLY press into the pan, compressing the mixture as little as possible.
7. Let cool for 30+ min before slicing.
Notes:
– Cook the marshmallows on low heat and turn off heat ASAP to avoid overcooking them and taking them closer to “hard crack” candy stage, which will make the treats turn out hard as a rock.
– Gently press, do not pack, into the pan, also to avoid hard brittle treats.

I’ve always had a hard time making them gooey like yours and I’m guessing I was overcooking the marshmallow. Thanks for the tips.

Wait until you try them with homemade marshmallows, total game changer!
Add 100 grams cold water and 30 grams Gelatin, refrigerate. In a small saucepan add 400 grams sugar, 225 grams corn syrup, 100g water, 2g Salt, 15g Vanilla and 15g Maple syrup, boil to 240 degrees fahrenheit. Cool to 210 degrees, add the refrigerated Gelatin, still until dissolved. Whip on high for 3-4 minutes. You can let them set up on parchment lined and sprayed sheet pan or make rice Krispy treats while the marshmallows are still liquid.

I LOVE brown butter and salt in RKT. Sometimes I add toffee bits to the melted mixture so they get a little melty. Then I like to add a handful of mini marshmallows right before pressing it into the pan. Makes em extra gooey with an extra crunch.
I was saying to someone that Rice Crispy Treats are the forgotten dessert. Why did they fall out of popularity 🤷🏻♀️ I would make them but not a lot of my family likes them

I’ve made them with fruity pebbles, it is almost moist from just how much you salivate and how well the marshmallow melts into every piece and around it. Heavily recommend it!
I make mine similarly, but probably like 2 large pinches of salt and tons of cinnamon. They’re heavily requested by my friends and family. Last week I made them without the cinnamon but did 1/3 plain RK and 2/3 cocoa krispies… divine!
