I got some Kikkoman Tempura Mix and found it is perfect for a fried fish. Also have been working on my fries recently. I also made some weird spicy tartar mix for lack of regular pickles where I was shopping. I was really hapoy with how much the sardines tasted like regular fish from a chip shop.
Fries were salt brined for 18hr and then par fried. After cooling I fried once more.
Tartar sauce was Kewpie, Valentina Extra Hot, and pickled mistard greens and brine (the brine was sweet like relish).
