• 2 medium ripe bananas (200g)
• 2 large eggs (100g)
• 1 cup Greek yogurt, 2% fat (240g)
• 1 tbsp liquid stevia or sweetener (5g)
• 1 tsp vanilla extract (4g)
• ½ tsp ground cinnamon (1g)
• 1 tbsp cornstarch (15g)
• ½ tsp baking powder (2g)
• Pinch of salt (≈ 0.3g)

How to Make It:
1. Mash the bananas until smooth.
2. In a bowl, mix eggs, yogurt, stevia, vanilla, cinnamon, and salt.
3. In a separate bowl, combine cornstarch and baking powder.
4. Add dry ingredients to the wet mixture and stir until smooth.
5. Pour into a lined baking dish and gently tap to remove air bubbles.
6. Bake at 330°F / 165°C for ~60 minutes until the top is golden and springy.
7. Turn off the oven, crack the door, and let rest for 10 minutes inside.
8. Cool completely, then chill in the fridge for at least 4 hours (overnight is best).
