►Ingredients for the Chicken Kabsa

►For the Rice

800g or 4 UK cups of normal basmati rice (wash and soak for 30 min max)

►For the Kabsa Spices

You could also use a store bought kabsa spice instead
2 tsp cumin seeds
1.5 tsp black peppercorns
1 tbsp coriander seeds
1 cinnamon stick around 2 inches
6 green cardamoms
6 cloves
Half nutmeg
1 tsp turmeric
5 tsp salt
2 dried black limes
3 bay leaves

►Other Main Ingredients

1/2 cup or 120ml sunflower oil
1/4 cup or 60ml ghee
7 cups or 1650ml water
1 large whole chicken cut into half or 4 large pieces
2 large or 360g large onions
2 large or 350g tomatoes
6 garlic cloves
1 tbsp tomato paste
2 green chilies
1 chicken stock cube
1/2 cup toasted almonds
Coriander leaves

►For the Chicken

3 tbsp melted ghee
1 tsp kabsa spice
1/2 tsp smoked paprika
Brush on the chicken

►For the Sauce

1 cup natural yogurt
1/2 thinly sliced cucumber
1/2 lemon juice
3 tbsp finely chopped coriander
1 garlic clove paste
1/2 tsp black pepper
1 tsp cumin
1 tsp salt
1/2 cup milk (use more or less)

[Music] this is how you make one of the best chicken [Music] cups hey Salam I hope you guys do well Al is back for another video and this time I’m making chicken cbsa chicken kbsa is a well famous dish in Saudi Arabia Yemen UAE I’m going to serve this cbsa with a nice yogurt cucumber sauce trust me you’re really going to enjoy it without further Ado let’s get started Chef present first let’s prep all the ingredients have I’ve got brown onions you want to thinly slice them make sure to keep the shape nice and [Applause] even also using your two Tomatoes again evenly chop them here go some the garlic cloves again I’m just going to finally chop these for the cbsa these are the spices that we’re going to use quite authentic here I’ve got black cumin seeds coriander seeds Black peppera cinnamon steak green cardamoms cloves and some of the nutmeg so I’m just going to throw these into a blender and that we’re going to throw in turmeric and a good touch of salt you could also use a bit of paprika but it’s not traditional now remove the spices onto your plate and in that we’re going to throw in some of the black lime with the help of your knife you want to parse it just so we can extract more flavor out of it for the rice I’m using basari you want to wash them to remove the excess starch and leave them soaked in water for at least 30 minutes I’m also using here some of the chicken stock Cube and some green chilies stock cube is not traditional but I’m using it just for more flavor and finally I’m using a whole chicken for kups you could also use chicken thighs instead grab yourself a pan turn up the heat a medium with the oil and for more flavor I’m also going to use some the he let the Melt or first we go in with our chicken if you’re using with the skin skin side goes down first we’re going to get a nice air on the chicken and then we’re going to throw in our onion and now carefully turn the chicken around we got a beautiful s on the chicken now let it cook from the other side for a few more minutes and now just remove the chicken onto your plate in the same pan we’re going to throw in our onions now a really good mixure that and we’re looking for a golden brown color on those onions a bit darkish Brown you know make sure to keep stirring it so we get an even color all around the onions I’m just going to leave them covered for around 5 minutes and let them cook all right let’s check this bah give the a good mix nice golden brown exactly what we’re looking for now when it starts to get brown we can throw in our garlic again we’re going to toast the garlic kill the smell of the garlic another minute or so beautiful nicely fragrant exactly what we’re looking for and now I’m going with our tomato paste I’m just going to lightly toast this as well before we throw in our Tomatoes mix it properly get the raw taste out of it like I said before one of the best chicken cups that you guys going to try it’s going to be absolutely mouthwatering so much flavor in this dish look at that amazing exactly what we’re looking for at this point another 20 25 seconds go with our spices and tomatoes the water from the tomatoes will help you know with the spices it will not let them burn I’m just going to toast everything again wow smells really really delicious you know give it 3 minutes now leave it cover it all right let’s check this tomatoes are nice and soft exact what we’re looking for a really good mix that amazing now going with our water and now we’re going to turn our chicken stock Cube few bay leaves a really good mix to that and now in that we’re going to throw in our chicken along with any leftover juices give that a really good mix again now cover and let this cook for around 40 minutes or so until the chicken is completely done it’s been around 20 minutes let’s check this oh looks amazing LT steamy and now I’m just going to throw in our two green chilies and cover it back we’re going to Ser our chicken cbsa with a very nice yogurt cucumber sauce going with the yogurt thinly sliced cucumber make sure to remove the seeds juice of half a lemon in there also go some of the finely chopped coriander one Club of fresh garlic for more flavor some black pepper a light of cumin good pinch of salt and some milk give that really good mix now and make sure it’s nice and smooth it’s going to go perfect with our chicken KSA you know amazing sauce you can adjust the consistency by using more or less milk milk our amazing yogurt cucumber sauce done all right guys let’s check our chicken all right so the chicken is ready now we’re going to remove it from this stock careful try not to break the chicken all right I’ve already broken the leg great and now I’m just going to measure this water how much water we have here now there is around six cups of water left around here now if you want you can get rid of the ba leaves from this now it’s the perfect time to throw in our rice give it a really good mix we’re going to let the rice cook until there is some water left at this point of time you can also have a little taste of the stock and adjust anything if you need to best to leave it covered heat is still on medium that looks amazing now there is some water left at this point of time we’re just going to cover the rice Now cover it with a clean kitchen cloth place your lid make sure it’s nice and tight and now we’re going to let this steam up for around 20 to 25 minutes until the rice are completely done the heat needs to be on low here we go some of the ghee which has been mixed with some of the cups of spice I’m just going to brush that onto our chicken and then we’re going to bake the chicken just for extra color make sure to cover all pets of the chicken it’s going to add a bit more Aroma a bit more color a bit more taste make sure to follow these steps for the amazing chicken cups or now this goes into your Air fryer or your oven the temperature needs to be around 200 C give it around 8 to 10 minutes all right guys it’s beautifully steaming let’s check our rice now oh look at that amazing just turn off the heat now I’m going to let all the steam Escape or let’s fluff up the rice look at that beautiful amazing I’m just going to show you a closeup look at that perfectly cooked KSA you know absolutely delicious just try not to break the rice just going to carefully mix be gentle with them M amazing all right guys let’s play over caps now our amazing chicken goes on the top I’m going to garnish this with some of the toasted almonds look at that beautiful use more or less depending on your liking also go some of the fresh coriander serving it with our amazing mint yogur sauce and also like to serve with some of this hot sauce that looks so so delicious I have a mouthwatering amazing chicken cupsa done you guys going to really enjoy with your family and friends [Music] perfect [Music] you all right guys let’s throw with chicken cupsa now I’m just going to add some of our cucumber yogur sauuce a light touch of hot sauce as well wow M that is so mouthwatering trust me the amazing kupsas spice really take this to another level is one of the best dishes out there the sauce the rise the crushed almonds wow this is a perfect chicken capsa you know what an amazing combination of flavors let’s try with chicken M perfectly cooked chicken you know it is so so delicious trust me is it better than barani we can debate that let’s mix in some of the chicken along with the rice this is just so mouthwatering you know you guys definitely need to make this M wow
