Peppers, shallot and garlic on the smoker for 1.5 hours with a little oil and vinegar. Simmered for 25 minutes then blended smooth 👌
The color turned out a little more brown than expected. But the flavor is great… even wife approved

Color actually looks more true to “traditional” hot sauces. Reminds me of when I was in Mexico and asked for “The hottest sauce you have. Something you wouldn’t give to a white tourist.” Let’s just say it was a funky brown/green and it did not disappoint.
