  4. Ribeye. Its from the loin end so its leaner and has a smaller spinalis/rib cap. Keep buying those ones so I can get mine 😉

    Paraspinus muscles run parallel to the spine; the NY Strip is in the lumbar spine region, whereas the ribeye is in the thoracic spine region. These are the muscles you feel to the left and right of your bony spine (which represents the spinous process of each vertebral level) when you feel your back. They basically are continuous, you just happened to get more in the lower thoracic/upper lumbar spine area.

    Depends on if it ended up on what the store purchased as a ribeye or as a striploin basically. Whenever I cut a piece like this off of either a ribeye or a striploin it gets sold as whatever it was cut off of.

    It’s not a strip. It’s the loin end of a ribeye. Basically where the ribeye starts to meet up with the short loin.

    This is actually my favorite cut. It’s either the last ribeye or the first NY Strip. Although the marbling on this one is pretty bad.
