Ok brains trust, I need help. My partner met someone who was telling him all about mango shotta glazed prawns. He came home excited and wants me to cook it. Now I’m a pretty good cook, but I don’t really know a thing about glazes. So my question, can ya help a girl out with a guidance on a mango shotta glazed prawns recipe 🙂

Without having any form of recipe or flavor profile you’re looking for, you’d want to cook the mango shotta down and reduce it to to probably at least 1/2 of its volume, over low medium heat while stirring/whisking occasionally. Once it’s reduced and more of a sticky syrup is probably add some butter along with any seasoning you want (maybe some heat like cayenne or chipotle powder). Basically reduce it down over low temps, add some butter and whatever seasoning you want. Be sure not to burn it by going too hot or not stirring it.
