CRUSHED POTATO SALAD WITH LEMON-CAPER-PARMESAN DRESSING! Literally the most flavorful potato salad with my favorite ever dressing 👊

For the salad:
1 ¼ lb baby potatoes
¾ cup thinly sliced red onion
½ cup chopped roasted red peppers
⅓ cup chopped fresh dill
⅓ cup chopped fresh parsley
½ cup feta crumbles
1/4 tsp salt or more to taste
1/8 tsp pepper

For the dressing:
4 tbsp olive oil
Juice of 1 lemon
Zest of 1 lemon
2 tbsp capers chopped
2 cloves garlic, minced
1 ½ tbsp maple syrup
2 tsp Dijon mustard
¾ tsp salt
1 tsp dried oregano
½ tsp pepper
¼ cup parmesan cheese, finely shredded

Optional ricotta spread:
½ cup ricotta cheese
3 tbsp Greek yogurt
Pinch salt
Pinch pepper

1️⃣Bring a large pot of salted water to a boil. Add the potatoes and boil for 15-17 minutes, until cooked through and fork tender. When they are cooked, drain the water and allow them to cool. 2️⃣Make dressing. Add the olive oil, lemon juice, lemon zest, capers, garlic, maple syrup, dijon mustard, salt, oregano, pepper and parmesan cheese, then mix to combine. 3️⃣Add the potatoes to a cutting board, then use the backside of a large kitchen knife, then gently mash the potatoes down and roughly chop them. 4️⃣Assemble the salad. Add the potatoes to a large bowl, then add the red onion, roasted red peppers, dill, parsley, feta, salt and pepper. Add the dressing and toss to combine.
5️⃣If using the ricotta, add the ricotta, yogurt, salt and pepper and mix to combine. 6️⃣Spread the ricotta onto a plate, if using, then top with the salad.
