My heart-shaped Medovik π―π A Russian honey cake made with thin caramelized layers and dulce de leche buttercream π°
Medovik dates back to 19th-century Russia, when a young chef created it for Empress Elizabeth. She famously hated honeyβ¦ until she tasted this cake ππ
I made this entirely from scratch, layer by layer, by hand and Iβm so proud of how it turned out π₯Ήπ«Ά Definitely making it again (with more cream between layers next time π).

Theres a Russian bakery and food place in my neighborhood and we asked the girl which cake she loved most and she said the honey cake for sure. My family and I loveddd it and we always get it now. It is super moist and melt in your mouth but that dulce de leche butter cream is what reallllly got me. I said to myself I have to learn how to make it!!! It wasnβt as difficult as I thought it was, just tedious and repetitive but so, so worth it!

I made one, once. It was great. But actual honey is expensive and I feel like my poor baking skills would be disrespectful to the product π― I should try again, someday.
