🌿 Spinach Rolled Tray Börek Recipe

🧺 Ingredients

For the dough:
• 180 ml warm milk
• 1 cup plain yogurt (180 ml)
• 90 ml water
• 90 ml vegetable oil
• 1 egg
• 1 packet baking powder
• 1 teaspoon salt
• Approx. 750 g flour (add gradually)

For the filling:
• 1 kg spinach (washed and chopped)
• 3 medium onions (finely chopped)
• 2 balls of white cheese (you can use feta or cottage cheese)
• 90 ml vegetable oil
• Salt, red pepper flakes, black pepper (to taste)

To roll out the dough:
• 2 cups flour
• 3 tablespoons starch (corn or wheat)

For brushing between the layers:
• 200 g butter (melted)
• 100 ml vegetable oil

👩‍🍳 Instructions
1. Prepare the dough:
In a large bowl, mix milk, yogurt, water, oil, egg, baking powder, and salt. Gradually add the flour until you get a soft . Cover and let it rest for 20 minutes.
2. Divide the dough:
Divide the dough into 11 equal pieces. Cover and let them rest for another 30 minutes.
3. Make the filling:
In a bowl, combine the chopped spinach, onions, crumbled cheese, oil, and spices. Mix well.
4. Roll out the dough:
Roll each dough ball thinly using the flour and starch mixture.
5. Assemble the börek:
Brush the rolled dough with melted butter and oil mixture. Add a layer of filling, roll it into a long log, then coil it into a spiral shape and place it in a greased round baking tray. Repeat for the remaining dough balls.

Bake in a preheated oven at 200°C (392°F) for about 30 minutes, or until golden and crispy.
