HOT KNIFE. Use a towel with boiling hot water on it and wipe the knife with it. That’s how you get the those perfect slices. Also you could do that very same thing and throw it in the freezer just enough to get it cold af for best results. (Tips from a professional chef)

Painfully and tediously. I work at a bakery and cheese cakes are a PAIN. But once you get your technique down they become really simple. Both with bake, presentation and slicing.
I recommend using a sharp knife, and wiping with a towel between each slice. It also helps if the blade is a little warmer than room temp (not hot you don’t want to melt anything) but setting the blade in a little bit of warm water and then wiping off the water can also help.

Couple issues here: don’t leave the metal bottom of the pan on if you are going to use a fancy cake stand! The METAL pan bottom here was the problem.
And yes, a hot knife will go thru a cheesecake cleanly but the big issue is the metal pan bottom against the ceramic. Just leave it on the metal pan and cut it on the counter. Skip the CAKE pan (that’s a cake stand it is meant for cakes, not cheesecakes.)

Some will tell you to use dental floss to cut a cheesecake. Give it a try. I’ve found that as long as the cake is at room temp, a knife warmed in hot water will do fine.

Have a picture of hot water dip your knife in hot water and wipe it dry in between each cut. And you’ll have nice clean slices! Looks beautiful!!

Holy moly! I just noticed the busted cake pedestal! I came here to say put it in the freezer for 20 minutes Have a pitcher of hot water to dip your knife in, wipe it clean in between each slice for nice clean slices but I think you might have an overdone crust a bit ? Or maybe your cake pedestal was already cracked??

Dental floss works really well and you don’t have to keep dipping it. Best to use unflavored.

I would cut it on a cutting board and then place it on your display board. A hot (dipped) knife does really well. But only if you just gotta share otherwise a fork does well too.

Also put a parchment round at the bottom next time so you can remove the whole cake from the pan, cut on a cutting board, and THEN transfer to a stand.

I found the easiest way, for me, is to freeze the cheesecake till it’s firm but not solid, then it cuts with no problem!

Cut into sections FIRST.
– Sharp knife – Deep jug of warm water – Towel or paper towel to clean blade between cuts – Cutting board
Cut in half FIRST, then into segments. You can cut into eighths easily by going half again twice, or twelfths by cuting half again then thirds.
Either way, a cheesecake, like a tart, is easier to put back together once cut, so separating slices beforehand – while more physically difficult than a cake – is not as… uglifying as a cake.
