I saw a video by the Bosh boys using shaved firm tofu for scramble, and it is a game changer. It gave the scramble such a soft, silky texture. I don't really have an exact recipe, but hopefully if you scroll through the photos that will help fill in the gaps of what it should look like each step.
In my little frying pan, I covered shaved firm tofu in Bonsoy(soy milk) just so it was swimming. Added garlic powder, onion powder, nutritional yeast, white pepper, turmeric. Made a cornflour slurry with more Bonsoy and slowly trickled that in until I hit a nice gravy consistency. Off the heat, I mixed in black salt. I served it with sliced spring onions, chilli flakes and more black salt and it was the highlight of my big Sunday brekky.
