1 lb. Italian sausage
1/2 cup diced onion
1/2 cup diced celery
1 diced carrot
1 Tbsp. minced garlic
1 large can diced tomatoes with basil and oregano (undrained)
6 cups beef stock
1 Tbsp Italian seasoning
1 cup frozen corn
1 cup cream
A few handfuls of chopped kale
1 package tortellini
Saute sausage, onion, celery, and carrot. When meat is browned add garlic. Stir for 1 minute. Add tomatoes, beef stock, and Italian seasoning. Bring to a boil. Add 1 cup frozen corn and 1 cup cream. Heat, then add the kale and tortellini. Cook until the tortellini is tender.
