Crêpes with apple cinnamon filling
Ingredients:-
1 scant cup oat flour (90 g)
4 tbsp tapioca flour (28 g)
4 tbsp potato starch or corn starch (28 g)
2 tbsp flax seeds ground (10 g)
1 1/2 cups light coconut milk or any other dairy free
milk (360 ml)
1 1/2 tbsp maple syrup or agave syrup (30 g)
Method:-
Process all ingredients in your food processor or just whisk them together in a bowl
Heat a non-stick pan/skillet with some oil over
medium heat .Pour about 1/4 cup of the batter into the pan, swirl the batter around to coat the pan evenly. Cook for about 2-4 minutes or until you can easily lift a side of the crepe. After you carefully flipped the crepe, cook for a further 1-2 minutes
After a while, the batter will get thicker (because of the ground flax seeds), just add a little bit more plant milk
For the filling, you’ll need two apples (chopped), 2-3 tbsp sweetener of choice (e.g.coconut sugar or brown sugar), 1 tsp cornstarch, cinnamon to taste, and a generous splash of plant-based milk (or water). Simmer for a few minutes over low/ medium heat and that’s it! Enjoy!
Shirazi Salad Wrap
Ingredients:-
Salad:
.1cucumber (150 g), diced
• 2 tomatoes (200 g), diced
.1/2 red onion (50 g), diced
• 2 tbsp olive oil
•1tbsp lemon juice
•Salt, pepper, 2 tbsp parsley (optional)
Yogurt Sauce:-
• 120 g Greek yogurt
•1garlic clove, minced
•1tsp dried dil
•1/2 tsp dried mint
•1/4 tsp salt
Wraps:
•2 large tortillas (25 cm)
Method:-
1) Mix cucumber, tomatoes, onion, olive oil, lemon juice, salt, pepper, and parsley.
2) Combine yogurt, garlic, dill, mint, and salt for sauce.
3) Spread 2 tbsp sauce on each tortilla, add half the salad (240 mI). Roll up.
4) Serve immediately.
Pie Stuffed Apples
Ingredients:
4 large apples (Honeycrisp or Fuji work well), cored
and hollowed out
1 cup pumpkin puree
1/4cup brown sugar
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4cup heavy cream
1 tsp vanilla extract
Whipped cream or vanilla ice cream, for serving
(optional)
Method :-
Preheat oven to 350°F (175°C). Arrange the
hollowed-out apples in a baking dish.
In a bowl, mix together pumpkin puree, brown
sugar, pumpkin pie spice, cinnamon, nutmeg,
beaten , heavy cream, and vanilla extract until smooth .Spoon the pumpkin mixture into each apple, filling them to the top,
Bake for 30-35 minutes, or until the apples are
tender and the pumpkin filling is set.
Remove from the oven and let cool slightly. Serve warm with whipped cream or vanilla ice cream, if desired.
Potstickers Mushroom 👇
Ingredients:-
3 cups all-purpose flour
pinch of salt
1 cup boiling water
1 tbsp cold water
Filling
2 tbsp avocado oil or other cooking oil
2 tbsp ginger, minced
1 medium onion, chopped
3 cups shiitake mushrooms, chopped
2 cups finely shredded cabbage
1 1/2 cups finely shredded carrot
4 (1 cup) scallions, finely chopped
1 tbsp sesame oil
3 tbsp Shaoxing wine or rice wine
2 tbsp soy sauce
1 tsp sugar
1/2 tsp white pepper
1 tsp salt
Method:-
Dough
Combine the flour and salt together in a medium bowl. Make a well in the center, and gradually add the boiling water, stirring with a spoon until the mixture forms clumps. Cover and let rest for five minutes. Add 1 tbsp cold water and knead into a ball, then cover and let rest as you prepare the filling.
Filling
Heat oil in a large work or skillet over medium high heat and stir-fry ginger and onions until
translucent. Add in chopped mushrooms and
stir-fry for another 3-5 mins until liquid is
evaporated, then add cabbage and carrots and stir-fry for 3-4 mins, until most of the liquid from the vegetables is released. Add chives, wine, soy sauce, sugar, white pepper, and salt, and cook one more min, then remove from heat. Taste and add more salt or sesame oil as necessary. Place filling in the fridge to cool:
To make the dumplings, divide the dough into two portions, and knead well. Roll each portion into a 1 inch rope, and cut into small tablespoon-sized pieces, flattening each piece with the palm of your hand. Dust the working surface with flour and roll each piece out into a flat disc. Add a generous amount of filling and pleat the edges, pinching tightly to seal.
