Still clearing out the fridge before our trip, and this combo turned out way better than expected. Roasted beets got a quick toss in apple cider vinegar and olive oil, mini bell peppers went into the oven for a few minutes before I added salmon fillets (just salt and pepper). Found some black rice in the freezer and whipped up a fast chimichurri with the last of my parsley, garlic, olive oil, red wine vinegar, salt and red pepper flakes. Drizzled it over everything, and honestly, what a meal!
