I call it “sharkbonara” cause I made shark shaped pasta for it
Heard this is a carbonara subreddit now. Technically this is with bacon, but I did cure and smoke the pork belly myself.

Quick and dirty recipe:
For the pasta: Semolina flour and water, following instructions on Philips Avance pasta maker (shark/“squalo” die is from Pastidea, highly recommend their products). I wanna say 250g flour, 105g water. Machine does it all once you add those two, you just have to cut it. Makes enough pasta for 2 people and some leftovers
For the carbonara itself, whisk together: 1 whole egg, 1 egg yolk 50-60g fresh grated pecorino (or Parmesan, whatever I have) Black pepper
In a separate pan cook about 4oz bacon/jowl bacon/guanciale if you can find it (I live in the south, please cut me some slack lol)
Pasta goes into the bacon pan once done, toss to absorb bacon grease. Transfer to bowl with egg/cheese mixture and mix to temper eggs.
