Chimichurri is a very simple sauce that’s a classic pairing with grilled meats, especially beef. You don’t need the wood oven to make it, unless you’re going to roast some fresh red chili peppers, but it does go well with many dishes that you would cook in the wood oven, specially steak, but it’s also a great accompaniment with chicken, fish, and vegetables.
It can be stored in the refrigerator for a couple of weeks. Over time it will lose its bright green colour, but it will improve in flavour.
This recipe makes a little over 2 cups, but you can half the ingredients.
200ml of good quality EVOO
60ml sherry vinegar
2 tsp chili flakes
Pinch of salt
A little black pepper (optional)
2 to 3 finely chopped cloves of garlic
40g, or 2 cups, of fresh parsley and 20g, or 1 cup, of fresh oregano

This recipe is not traditional, you should be using a neutral oil (like canola) and ONLY red wine vinegar, and no roasted chillis please.

The higher the quality of the oil the sharper the taste. Im still looking for a fitting oil
