Anti-inflammatory Greek lemon soup 🍋 that HEALS the soul & body

Inspired by the Greek lemon soup called Avgolemono, this may spin on the classic Greek soup! This is my low carb, dairy free, high protein, gut healthy, immune boosting anti-inflammatory spin on the it your tummy will love. 🤓 Feel free to double the recipe if you are meal prepping! Makes 4-5 servings

Ingredients:
1 1/2 cups chopped celery
1 1/2 cups chopped onion
1 1/2 cups chopped carrots
3-4 garlic cloves (chopped)
2 cups riced cauliflower
4 cups chicken bone broth
1 1/2 cups pulled rotisserie chicken
1 room temperature egg
1/4 cup lemon juice (juice from about 2-3 lemons)
Fresh parley (chopped for garnish)
Salt & pepper (to taste)

Instructions:
To a large pot on medium heat, add some olive oil, carrots, onions, celery and salt. Sauté for 2 minutes then add in garlic and cook a few more minutes or until garlic is fragrant. Add in riced cauliflower and cook for 2-3 minutes. Add in bone broth, rotisserie chicken, bring to a simmer then turn off the heat. In a small bowl, add in lemon juice, one egg and whisk together. Slowly add in 1 ladle full of hot broth from the soup. Add this mixture into the soup. Garnish with fresh parsley, salt and pepper to taste. Makes 4-5 servings. Store leftovers in the fridge for up to 5 days or freezer for 3 months.
