I’ve peaked as a chef. I didn’t really eat today, I’ve been drinking beef broth leftover from the short rib braising pan to get through.

    Been there, done that, when I cooked professionally for years, from fast food, to catering crew, to short order, to finer dining line cooking, even a roach coach kitchen at one time, all I ate on my days off were frozen tv dinners.

    My work is generous about free food, but I’m usually too pumped up on cortisol to eat much of anything. Typical shift meal for me is one taco or like 4 raw oysters.

    I’m actually jealous of this meal, I bet it gives you tons of energy and makes you feel full without being too heavy.

  7. I made chicken adobo yesterday and spent the entire day eating spoonfuls of the congealed braising liquid all day. It’s pretty fucking nice, ngl.

    That stuff is gold! I’m surprised you’re drinking it and not serving it with the beef. My go to are the carrots from the braise. Mmmm … Meaty overcooked carrots……

    Im a Sous in a CC and only work from May-October then i got the whole winter vacation, i always gain weight during that time. Now in the season i live of lunchables,lol.

    Best braising liquid I ever had was from some red wine braised wagyu beef cheeks. The braising liquid and mirepoix was literally liquid gold. I was eating that shit like crazy.

    Joking aside, I keep a few meal replacement bars in my bag because those “all-go” days sneak up on you.

    My wife didn’t believe I actually forgot to eat anything for the longest time.

    I was clamped to a hospital bed for four days after I broke my neck and even the hospital version of this sustained me so I think you’re good.

    You could make a banging soup with that too. French onion….beef pho….

    Would make a good boost for like a bourguignon or even added to a bolognese.

    Seems like a waste to just…drink it. I dunno

    I will swing by my favorite pho place when I’m sick and just ask for 4 large pho broths to go and then drink it out of a mug on my couch. Nothing like living the broth life, bestie.
