My daughter was sent home from daycare Friday because she "got sick". I thought I was in the clear until about 1 hour into cooking this brisket today, and it hit me. It was the best I've ever trimmed a brisket. I used a new rub concoction. I did a foil boat for the first time (only because I ran out of foil, but it worked very well). My smoking wood was nice and dry, and burned hot and clean. The probe went through the meat like a hot knife through room temp butter.
I took a bite, and it was the best brisket I've ever had. Immediately felt like I was going to vomit so I sliced up enough for the wife and kid, and went to bed. My wife is bagging the rest up for me.

Looks incredible. Freeze it ASAP and reheat (in a sous vide if you have one, I’ve gotten amazing results with mine reheating leftovers from frozen) to enjoy when you’re better, it’ll be every bit as good.
What grill did you use?
In my case, if I’m smelling it all day I almost never end up enjoying it at night when I’m actually feeding people. I judge my food the day after. And I just smoked my personal best ribs for Fathers Day. The wife didn’t agree, but jokes on her I don’t have any kids, so myeh. Also my dad eats ribs with a fork and knife.
