Minestrone – Save Recipe Below 👇

This is one of the healthiest recipes I have on here, based on how the Sardinians make it (longevity soup). This is four serves of 500 kcal but you don’t need them that big to be honest. Reheats like a dream!

Nutrition – 500 kcal (18P, 70C, 18F) + 14g fibre

50g olive oil
An onion
200g carrot
200g celery
200g carrot
600g potato
2 x 400g tinned tomatoes
1 tin red kidney beans
100g pearl barley
Parsley
Basil
70g Parmesan

Incredibly symbols. Just everything in sequence given a few minutes between each. Simmer once everything is in for at least 20 minutes. Finish with salt, pepper and Parmesan cheese.

  2. It's very similar to a recipe here in Brazil, if you substituted some pasta and added any type of meat it could be the "Brazilian soup" here. It's great in the winter!
