Back at it again! I've been sticking to thighs ever since the fiasco with the chicken breast. Since then I've been using whiskey bent pecanerry rub and it's made all the difference. It's my new favorite in fact.
All that to say I tried meatloaf today. It turned out just an Itty bit dry but adding a little sauce to it fixes it right up. Gotta say it's delicious. Even got my first smoke ring albeit a small one. Even gave a slice to the neighbor! They flipped over it. Feeling proud about this one.

Looks great, I love a good meatloaf
Got my pellet a couple months ago, and I think meatloaf has been one of my favorite things to cook so far. Family agrees too, everyone gets excited when I say I’m doing meatloaf.
