Burger night! This week’s special had home ground center cut chuck and Denver steak, American cheese , Sazon citrus caramelized onions, crumbled bacon, mustard pickles, and homemade maple roasted garlic lime sauce, on a buttered and griddled homemade brioche style bun.
The onions were based on Chuletas Frita (Puerto Rican Fried Pork Chops) marinade. Three medium diced sweet onions sautéed on medium/low in olive oil with salt and pepper till they soften and start to caramelize. Season with a packet of Sazon, Adobo seasoning, garlic powder, and oregano powder. Then I added a little chicken stock, white vinegar, the juice of an orange and a lime, as well a squeeze of agave. Let the onions continue to cook and let the sauce reduce and thicken.
