1 can chickpeas drained & rinsed
5 Persian cucumbers, diced
9-10 mini sweet peppers, sliced
15 cherry tomatoes, sliced
1/2 container arugula, chopped
Dressing is juice of 1 lemon mixed 1:1 with olive oil, salt, pepper, garlic powder, and about a teaspoon of honey. Hot honey and/or some Dijon would also be good.
Would add shallot or red onion, but didn’t have one on hand. Leftovers for lunch were even better once everything got really cold and marinated in the dressing
