Dang I haven’t seen one of these in a while. Probably gtg if you make chili with it or some other fully cooked dish.

Looks like they added kidney and liver to the grind. Make a good meat pie filling with onions and gravy.

Fun fact, ancestral beef refers to beef from cow breeds that no lo get exist – hence used by our ancestors. The most common source is from cows they find frozen in glaciers from the last ice age, and have a typical age of 5-10000 years. This beef has been dry aged for so long they have to add in extra fat and moisture, otherwise it will mummify you from the inside during digestion.

I get Force of Nature brand, they also do a similar blend of ground chicken that is great.

I buy this blend from a local meat processor. Usually just has heart, liver, kidney ground in.
Ancestral beef blend is perfect for beef ragu/bolognese

Normally I’d be like “it’s a blend, that’s your answer” but the organ mix sounds wonderful…just wish it had heart too.

I work at a meat store similar to Wild Fork with frozen beef, but we also own the farm. Pasture raised, grass fed, pure Wisconsin beef. We make something we call Primal Blend that’s 90% ground beef and 10% heart, liver and kidney. People love it.

It’s a load of health mumbo jumbo. That we need to eat organic meat for health. Eat it or don’t I don’t care but most people don’t need the excessive iron and any one that drinks heavily should avoid organ meat all together.

This meat browned with a creamy mushroom and sherry-onions sauce, ribbon pasta, a little bread for dippins. Or as some sort of dirty rice with braised chicken thighs
