You’re discovering the amazing existence of brassica oleracea. The same plant is collards, Brussels sprouts, cauliflower, kale, kohlrabi, cabbage, broccoli, etc, just each optimized for different parts of the plant.

I once ate all my broccoli leaves before it started forming broccoli. I thought it just wasn’t working so I just ate the leaves. They were delicious.

It’s ok. Years ago I had a neighbor which what I thought was a flock of turkeys. Yeah, they weren’t turkeys…they were guinea hens.

I use Brussels sprouts leaves to make sag. They’re delicious, and much milder in flavor than the sprouts.
