ABOUT THIS RECIPE:
Turning vegetables into a dip is a famous technique in Moroccan cuisine. These dips are referred to as “”Zaalouk.”” This cooking method involves cooking the vegetables twice. First by steaming, grilling, or frying them, before mashing them and cooking them a second time with a variety of spices, herbs, and lemon juice. Zaalouk is mostly often made with eggplants, but pumpkins, cauliflower, zucchini and carrots are also very popular alternatives.

In this course, the dada is making a cauliflower version of Zaalouk. It is made with only cauliflowers, garlic, parsley, cilantro, olive oil and a few staple spices. This recipe is very easy and quick, which makes it a perfect dish to throw together on busy nights, or to make ahead and store in the fridge, then enjoy throughout the week.

If you don’t have a double boiler for steaming the cauliflower, you can always cook it in a pot with just a little bit of water.

Serve the cauliflower zaalouk hot or warm, then dip into it with some Moroccan bread, and enjoy!

Ingredients
For the cauliflower Zaalouk
1 medium cauliflower head
6 garlic cloves (or to taste)
A small bunch of parsley and cilantro
1 lemon (or to taste)
3 tablespoons olive oil
1 teaspoon salt (or to taste)
1/2 teaspoon ground black pepper (or to taste)
1/4 teaspoon chili powder optional
1 teaspoon ground cumin (or to taste)

For decoration (optional)
Parsley leaves

Steps
Step 1: Preparing the ingredients
1- Remove the stems and leaves from the cauliflower head, then remove any black spots.
2- Break the cauliflower into florets, then rinse them.
3- Peel the garlic.
4- Finely chop the parsley and cilantro.
5- Juice the lemons.

Step 2: Steaming the cauliflower
1- Bring water to a boil in the pot of a double boiler.
2- Add the cauliflower and garlic to the steamer basket.
3- Season with salt, then steam for 20 minutes or until the cauliflower is tender.

Step 3: Preparing the cauliflower Zaalouk
1- Transfer the cauliflower and garlic to a pan over medium heat.
2- Mash the cauliflower and garlic using the back of a wooden spoon.
3- Add the olive oil, lemon juice, salt, pepper, chili powder, cumin, parsley and cilantro.
Note: Since salt was added to cauliflower when it was steaming, taste the Zaalouk and adjust salt as needed.
4- Stir well to combine all the ingredients, then cook for 5 minutes.

Step 4: Serving the cauliflower Zaalouk
1- Place the cauliflower Zaalouk in the serving plate.
2- Decorate with parsley and serve.
