Not the best picture but I’m too excited to share the recipe before bothering to try and perfect a picture!
Ingredients:
15 grams coconut flour
30 grams AP flour (I use vetta protien flour if your in Australia otherwise I’d assume normal would work)
45 grams or to taste sweetener baking blend (not in calorie count as it’s practically 0 cals)
Teaspoon baking powder
Pinch of salt, a shake of cinnamon and a dash of vanilla extract
100 grams egg whites
100 grams almond milk
1 small grated carrot (mine was 80g)
Mix dry before adding wet and whisk together (I just use a fork)
Bake in a preheated oven (180°c) for roughly 25 mins or until a knife comes out clean.
For the frosting I used 60 grams light ricotta and 15 grams casein Protien (formed a lovely thick creamy frosting)
