Would love some recommendations! I do high-volume, between 65-90 guests over the course of 2 1 hour services. I also plate entrees, so sometimes it looks a little messier than this. This was my second shot with pineapple upside down, but I do feel like I nailed it. I'm a little limited with my tools, but any advice, recipes ideas is appreciated!

  1. You are doing a phenomenal job and don’t let the imposter syndrome fool you.

I wish I had actual technical advice for you, but I do not. As someone that could potentially eat one of these in my lifetime, they look fantastic and I’m sure they taste delightful.

You should be so proud! As an amateur baker and someone whose cooked for 20 people on occasion what you’re doing is an amazing feat – and looks absolutely delish

You’re doing great! Where do you get your large recipes from?

If you have cups, banana pudding keeps well when prepped, and depending on how you do it, it can be super easy. I want to try all your deserts btw they look great 🙂

Congrats on the job, everything looks delicious!

My recipe suggestions would be a chocolate mousse, a bread pudding, or cheesecake.

I have a weakness for Boston Cream pie. I’d definitely order that. It looks yummy.

  10. Going to give feedback, but no intentions of being rude. First, most of those desserts are on a plate that’s way too big for it. If that’s your only option, totally understandable, but I would try and find a smaller plate if those are the portion sizes. I would also get rid of the piping around the Boston cream pie on the base, for me personally it doesn’t look right, but it’s just my opinion. I would also put some type of texture (crunchies, blitzed up cookies) under the ice cream so it doesn’t melt as quickly on the plate. As far as the desserts themselves, they all seem like classic traditional flavors that everyone would enjoy and look very homemade (in a good way). Maybe some type of cheesecake as well in there? Hope any of this was helpful!
